LEE Seung-jun
Owner Chef of Hulotte
Chef Lee Seung-jun joined the culinary world when he moved to France in 2001. He built his career in France for sixteen years, working at various famous restaurants and five-star hotels. Lee started at Restaurant Stéphane Derbord, a Michelin one-star restaurant in Dijon. He moved on to Fouquet's Barrière, Park Hyatt Paris-Vendome, and Hyatt Paris Madeleine.
In 2004, before Korean cuisine went global, he opened a French dining place based on Korean food in Dijon, Bourgogne. Lee returned to Korea as he joined Hyatt Regency Jeju in May 2015 and opened his own place Hulotte in 2016, to present sustainable foods close to nature.
In 2019, Lee worked with Korea Tourism Organization at Osaka Gala Dinner to present Korean cuisine. His theme was ""Into the world and to dust," presenting images of marriage, birth, and traditional holiday charye table like a movie. Lee has participated in the Seoul International Food Festival, talking with the audience and cooking French food from the films at the festival venue.
